Join taste of science-Houston and the American Society for Microbiology for an interactive
evening all about microorganisms in our food! This immersive experience will give you a chance
to learn about the most up-to-date research and applications for food microbiology technology.
We’ll also explore what the future of food microbiology looks like in the 21 st century.
Speakers include:
Santiago Cuesta (Rutgers University)
o Santiago will discuss the gut microbiome and its impact on gut-to-brain neuronal
circuitry. We’ll be playing an interactive game that will allow you to experience
the gut-brain axis for yourself!
Vickie Kloeris (Institute of Food Technologists/NASA [retired])
o Vickie will discuss how food is prepared to prevent spoilage and retain taste
during space travel. Bonus- you’ll get to taste some of the same food that the
astronauts eat!
Drew Russey (St. Arnold Brewing Company).
o Drew will discuss the process of fermentation, and how certain microbes impact
the flavor of beer. Includes a beer tasting experience!
Ella Hohmann (The Health Museum)
o Ella from The Health Museum will be talking about the essentiality of pro-biotics and pre-biotics in the diet to maintain a healthy gut microbiome, in addition to the "Know Your Microbes" activity.
Abdul Latif Khan (University of Houston)
o Abdul will share ideas for improving food security in the face of climate change.
